Xanthan Gum

Common Name: Xanthan Gum
Chemical Name: Xanthan Gum

Xanthan Gum is a food additive used as a thickener and stabilizer. It can replace fat in low-calorie foods, act as a foaming agent, and help protect food quality during freezing.

Xanthan Gum is a hydrocolloid supplied as a white to tan powder. It dissolves readily in water and provides high viscosity even at low concentrations. It exhibits lower viscosity under shear and remains stable across changes in temperature, pH, and salt concentration. These special properties make it suitable for a wide variety of food applications requiring specific texture and stability.
