Chemical Name: Sorbitol, Glucitol

Sorbitol is an alternative sweetener with approximately 0.6 times the sweetness of sugar and nearly half the calories. It is therefore widely used in food products for consumers who wish to manage their weight. Sorbitol can also retain moisture in products and function as a cryoprotectant, helping prevent ice-crystal formation in frozen foods and ice cream.

Sorbitol is a sugar alcohol. In powder form it appears as a white powder and is produced from starch-containing agricultural crops. The starch molecules are broken down into glucose and then hydrogenated. Sorbitol is most commonly sold as a liquid solution.
