Raw Milk
These are microorganisms that inhibit the activity of harmful microbes that can negatively affect the product being manufactured.
Harmful microorganisms produce toxins that alter the product’s flavor and texture.
Protective cultures are widely used across Europe as a natural method of product management.
Milk treated with protective cultures retains its natural aroma and enables the production of high-quality cheese and yogurt with increased yields.
Cheese & Yoghurt
Protective cultures can be used in cheese and yogurt in two ways:
1. Added to raw milk prior to processing to enhance raw milk quality, resulting in higher yields and superior quality in the final cheese and yogurt products.
2. Added directly to cheese and yogurt to prevent spoilage and extend shelf life;
they act as a natural preservative that does not require specific labeling (Clean Label).
